Swiss Chard Soup

I had this brilliant idea of going on a three day cleanse starting today.  So this past weekend while shopping I filled my cart with fruits and vegetables.  Everything from tomatoes, kale, oranges, lemons, ginger, beets and so much more.  Sunday night I started juicing and preparing all five “meals” for the next three days.

Needless to say I quit about four hours after having my morning juice, which consisted of carrots, apples and ginger.

What was I thinking? I love juicing and knowing that what you’re drinking is so nutritious and healthy, but not being able to start my day with a coffee and a piece of toast was not going to work for me.

With all these delicious fruits and vegetables in my fridge I had to think of other ways to prepare them so they wouldn’t go to waste especially now that I was done with my juice cleanse!

I immediately thought I could either make a salad or soup with the swiss chard.  I decided to make a very easy swiss chard soup.

I sautéed half an onion and minced garlic.


Next, I chopped the swiss chard (stalks and leaves) and added them to the pot.  I Stirred once in a while until the leaves were half wilted.

Then I added the seasoning:

1/2 tsp salt
1/4 tsp pepper
1/4 tsp dried thyme
6 cups of chicken stock
1 cup of cooked stelline pasta (stars) or any other small pasta

I brought everything to a boil and let it simmer for another 15 minutes.  Lastly, I blended everything together for a puree soup.

The croutons and parmesan are completely optional.
